Mother's Day Appetizers

Fruit Dip

• 2 cups plain yogurt
• 2 tsp. honey
• 1 tsp. lemon juice

Whisk together yogurt, honey and lemon juice. Use cut up fruit to dip.

Citrus Salad

• 8 cups mixed greens
• 1 ruby red grapefruit, peeled and sectioned
• 1 can mandarin oranges, drained
• 1 cup raspberries
• ¼ cup chopped red onion
• ½ cup extra virgin olive oil
• ¼ cup balsamic vinegar
• Salt and pepper to taste

Place mixed greens into a bowl. Add fruit and onion. In a separate container, mix olive oil and balsamic vinegar by shaking in a sealed container or whisking. Gradually pour dressing on the salad and mix. You do not have to use all of the dressing. Season with salt and pepper to taste, toss and serve.
