Fall Harvest Recipes


Butternut Squash Soup
2 medium buternut squash
2 cups chopped onion
2 garlic cloves, chopped
1 Tbsp. grated fresh ginger
5 Tbsp. unsalted butter
6 cups vegetable or chicken broth
2 Tbsp. Vegetable oil
Salt and Pepper to taste

Cut squash in half lengthwise and scoop out seeds. Place halves cut side down on a pan with a thin coating of vegetable oil. Bake for approximately 45 minutes or until tender.

Heat butter in in a saucepan and sautee onion and ginger over low-medium heat until onion is cooked. Add broth, cover and simmer for 10 minutes.

When squash has cooled, scoop flesh from the skin and add to the sauce pan . In batches, puree mixture in a blender or food processor. Return pureed mixture to the saucepan and cook until heated through. Salt and pepper to taste.

Garnish with seasoned croutons and/or a dollop of sour cream.


Stuffed Artichokes
4 artichokes (chokes removed)
1 cup ricotta cheese
1 egg, lightly beaten
2 Tbsp. grated parmesean cheese
¼ cup dry bread crumbs
2 Tbsp. melted butter
4 ounces procsuitto (dry cured ham) sliced into thin strips
Salt and pepper to taste
Wash artichokes in cold water. Cut off the top inch from each artichoke and trim the thorns off of the outer leaves. Steam artichokes for 15 to 30 minutes, or until tender. After the artichokes are cooked and cooled, use a spoon to remove the choke and the inner purple and white leaves.

In a bowl, blend ricotta cheese, parmesean cheese and egg. Mix in prosciutto. Season with salt and pepper to taste.

Stuff the artichokes and place them in a baking pan with a thin layer of water lining the pan. Sprinkle breadcrumbs, parmesean cheese and melted butter over the artichokes. Bake for 30 minutes, or until the outer edge of the stuffing is golden brown.


Pork Roast
6 garlic cloves, minced
1/4 cup chopped fresh rosemary
2 teaspoons salt
1 - 4 1/2- to 5-lb boneless, tied pork loin roast
Preheat oven to 375°F.

Mix garlic and rosemary. Stir together with salt and season with pepper. Rub 1 tablespoon garlic mixture all over pork. Beginning at 1 end of loin, make a 3/4-inch slit with a long thin knife through center of loin to other end. Stuff slit with remaining garlic mixture and whole rosemary sprigs (should be romoved before serving). Marinate at room temperature 30 minutes.

Place pork loin, fat side up, on a roasting pan in middle of oven for approximately 2 hours or until the internal temperature of the pork loin reaches 155°F. Let pork stand, loosely covered, 20 minutes. Remove string. Cut into 3/4-inch-thick slices to serve.


Roasted Baby Potatoes
2 ½ pounds of baby potatoes
¼ cup olive oil
1 tsp. salt
1 tsp. pepper
3 cloves garlic, chopped
1 medium purple onion, coarsely chopped

Mix washed potatoes in a bowl with olive oil, salt, pepper, garlic and onion. Transfer to a baking dish and bake in a preheated 375oF oven for approximately 30 minutes, or uintil potatoes are cooked through. Mix potaoes and seasoning part way through cooking.
