Easter Appetizers

Crab Salad

• 3-4 packages of artificial crab meat
• 3 Tbsp. lemon juice
• 2 Tbsp. fresh or dried parsley
• 1 cup diced yellow and red pepper
• ¼ cup olive oil (or enough to just coat the crab)
• Salt and pepper to taste

Separate crab meat into thin strips and add to salad bowl. Add remaining ingredients, mix and serve.

Spicy Artichoke Dip  

• 1 can quartered artichoke hearts,chopped
• 1 cup mayonnaise
• ½ cup grated parmesean cheese
• ½ cup grated asiago cheese
• 1 garlic clove, finely chopped
• ¼ cup jalepeno peppers, chopped  

Preheat oven to 350 0 F. In a mixing bowl, combine and mix all ingredients. Place mixture into a baking dish and bake for 20-25 minutes, or until the dip is bubbling and slightly browned on the top. Serve warm with pita wedges, crackers or tortilla chips.
