Frosty Pumpkin Dessert WINNER (week two)
This is a receipe for a very tasty dessert that my family has enjoyed for years and it's easy to make for Thanksgiving and Christmas holiday partys
Ingredients
1 can (15oz) solid-pack pumpkin
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves (optional)
2 quarts vanilla ice cream, softned
1 cup finely chopped walnuts
Preparation
In a large mixing bowl, combine pumpkin, sugar, vanilla, salt, ginger, nutmeg and cloves. Fold in ice cream. Transfer to a greased 13x9 dish. Sprinkle with walnuts. Cover and freeze overnight. Remove 10 minutes before serving.- Carol 11/29/2003
Tofu muffins and meatless meatloaf
Ingredients
Two pounds of tofu (firm)
One third to half cup zucchini,
grated One quarter to one third cup carrot,
grated One third cup wheat germ (optional)
Three quarters cup of bread crumbs
Two tablespoons extra virgin olive oil
Two to four tablespoons soy sauce (optional)
Three to four cloves garlic
minced One egg (optional)
Preparation
Mash the tofu in a bowl Add all the other ingredients and mash Yes, with your hands Make little balls of the mixture and place in muffin pan Bake at 375 for about 45 minutes Tips and Tricks Soy sauce will make the muffins a bit salty, and with the garlic you may want to reduce or skip the soy sauce.
